Curry Chicken
1 1/2 to 2 pounds boneless chickenbreasts,
Salt, pepper, curry powder
3 tablespoons oil
1 bunch green onions
3 red chili peppers (divided)
8 oz (240 ml) whipping cream
1 cup chicken (250 ml) broth (use a cube)
3 bananas (sliced)
3 1/2 oz ( 100 gr.) peanuts
1 to 2 tablespoons light gravy mix (powder)

 

Preparation

Wash the chicken and pad dry. Cut into strips.
Season strips with salt, pepper and curry.

Heat oil in a big pan, brown chicken. In the meantime,
Cut green onions into 1/2 inch pieces, clean chilis,
get rid of seeds, cut into thin slices.
Add green onions and half of the chilis to chicken.
Add cream and broth, cover and cook for 20 Minutes,
Add peanuts and bananas to chicken,
let cook 10 more Minutes,
stir in gravy mix, add salt, pepper and curry to taste.

Serve over rice and sprinkle with chili slices.
